Peanut Butter Popcorn


We've been playing a lot with alliteration this week, probably because we started reading the A to Z Mysteries by Ron Roy. So, when I was speaking to a childhood chum on the phone, and she mentioned she was making Peanut Butter Popcorn, I thought - perfect!

I popped up a pile for our story time picnic, and parceled it out to my preteen progeny, who pronounced it preferable to plain.


Peanut Butter Popcorn

1/2 cup light corn syrup
1/2 cup white sugar
1/2 cup peanut butter
1 teaspoon vanilla
6-8 cups of popped popcorn

In a small pan, dissolve the sugar into the corn syrup, just bringing it to boil. Remove from heat, and stir in the peanut butter and vanilla. Pour, immediately, over the popcorn, and mix it in. If you don't mind chewie popcorn, it's ready to eat. If you prefer a little more crunch, place the peanut butter covered popcorn into a roasting or cake pan, and into the oven at 250 degrees Fahrenheit for about 20 minutes. Stir midway through. Remove from the oven, and enjoy.

Geesh Leah! What time do you get up in the morning?!! Blogging at 5:11 in the morning!? I checked to see if our library had that series, they have the first two, but I can get the rest through the other libraries! It looks like a fun series.
